Somehow, It Smelled Like Mango

I was preparing my favorite easy lentil soup, and while I was frying chopped parsley and garlic in olive oil and after I added a pinch of salt (not in the recipe), I noticed the familiar smell of mango coming from the pan. Not sure if I smelled it before when I did not add the salt.

Very strange.

An Easy Lentil Soup Recipe

Try this lentil soup recipe. It is easy and can be ready in less than an hour.

Ingredients:

250 grams of red lentils

1 medium-size potato, peeled and chopped into bite-size cubes

6 cloves of garlic, minced

A handful of fresh coriander, chopped

2 tablespoons of wheat mixed with water

2 tablespoons of extra virgin olive oil

Fresh lemon juice

1 liter of vegetable stock


Preparation:

1. In a pot, bring the vegetable stock to boil.

2. Add the red lentils into the boiling vegetable stock. Reduce the heat and let it simmer for 15 minutes.

3. Meanwhile, fry the minced garlic and chopped coriander with extra virgin olive oil in a pan.

4. Add the potato cubes into the red lentils.

5. When the red lentils become al dente, add both the fried garlic and coriander as well as the wheat mixed with water, and mix together.

6. The soup is ready for serving when the potato cubes are cooked thoroughly.

7. When serving, mix a teaspoon of lemon juice with the soup in each serving.
